Sugar Cookie Bars
Sugar cookies are fantastic and they create memories of rolling out dough and decorating at Christmas time, but sometimes you just want a sugar cookie without all the hoopla. Enter the sugar cookie bar.
It's one giant sugar cookie that you just cut into cute squares and eat. Or in my case, break off tiny pieces every time you go into the kitchen which then eventually adds up to the equivalent of 8 sugar cookies. It's a fun game I like to play.
No rolling, no chilling, no cutting, no nothin. Mix, bake, eat. And then add cream cheese frosting. Or whatever frosting you like, but if you want to win at life then add cream cheese frosting because it's the bestest frosting eva.

Ingredients:
Sugar Cookie Bars
Ingredients
1 cup (2 sticks) unsalted butter, room temperature
2 cups granulated sugar
4 large eggs
2 teaspoons pure vanilla extract
4 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
Cream Cheese Frosting
1/2 cup (1 stick) unsalted butter, room temperature
2 blocks cream cheese (8 ounce blocks), room temperature
2-3 cups powdered sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
Instructions:
Bars: Preheat oven to 375 degrees. Spray a 9x13 baking pan with nonstick spray and set aside.
In a mixer, beat the butter and sugar together on medium to high speed until light and fluffy, about 2 minutes.
Add the eggs, one at a time, mixing after each egg. Add vanilla. Mix until just combined.
In a separate large bowl, whisk together the flour, baking soda and salt. Add this mixture to the wet mixture a little at a time, mix after each addition until just combined.
Pour dough into the baking pan and mold to fill the entire pan. Dough will be sticky and heavy.
Bake for 10-12 minutes or until a toothpick comes out clean. Cool completely before frosting.
Cream Cheese Frosting: In a mixer, mix the cream cheese and butter together on high for about 2 minutes.
Add powdered sugar, one cup at a time and mix thoroughly after each addition. Add the vanilla and salt, mix again. If the frosting tastes too sweet, you can add a little more salt. (careful though, just a tiny bit) If the consistency is too thick, you can add a splash of milk. If it's too thin, add more powdered sugar until you get the desired consistency.
After the bars are cooled, slap the frosting on and lick your fingers. So good!
