Monster Cookies
Classic Monster Cookies packed with all your favorites: peanut butter, oatmeal, M&Ms and chocolate chips. Super soft cookie that’s easy to make!
There is a cookie place in Omaha called Eileen's Cookies. They have the softest, yummiest cookies. If someone brings Eileen's to work, word travels quickly. Even if I'm trying to be good, once I hear it's Eileen's then I need to have one. Just have to. Okay, I sound like an ad for Eileen's. Back to my point, they have an amazing Monster cookie. It's soft and packed with goodness.
If you don't know what a Monster cookie is, let me help you out. A monster cookie is a peanut butter, oatmeal, chocolate chip, m&m cookie. All. in. one. It's ridiculous. Eileen's has such a good one, so I went on the search for a really good recipe to make them at home. And I found it, did some tweaking and made a super soft, goody packed monster cookie.

Monster Cookies
Lolo's Desserts | January 2020
Ingredients:
1/2 cup (1 stick) salted butter, room temperature
1/2 cup packed brown sugar
1/4 cup sugar
3/4 cup creamy peanut butter
1 large egg
1 teaspoon pure vanilla extract
1/2 teaspoon baking soda
1 and 1/4 cups all purpose flour
1/2 cup quick oats
3/4 cup M&Ms (any size or variety)
1/2 cup semi-sweet chocolate chips
Instructions:
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or Silpat mat.
In a mixer, cream the butter and sugars together on medium speed, about 3 minutes until light and fluffy. Add in the peanut butter, egg, and vanilla. Scrape down the sides of the bowl as needed. Slowly mix in the baking soda and flour. Do not overmix.
Fold in the oats, M&Ms and chocolate chips by hand. Chill dough for about 30 minutes.
Roll balls of dough, about 2 Tablespoons of dough per ball, onto prepared baking sheet. Press a few extra M&Ms on top for looks, if preferred. Bake for 11-13 minutes– the cookies will still look a little soft, which is recommended.
Slightly press down the baked cookies with the back of a spoon, since the cookies only slightly spread in the oven. Allow cookies to cool on baking sheet for 10 minutes before transferring to a wire rack. Cookies will firm up as they cool.
