Breakfast Sliders
Ah, Christmas morning. Pajamas, coffee, wrapping paper everywhere, lack of sleep and a hungry family starting to get cranky. Christmas morning was always super fun and then a rush to get ready to wherever we were going that day to see family or in my case this year, a scramble to clean up for family coming over.
So , skip the headache and go with super easy, prep ahead of time and throw in the oven on Christmas morning. I’m in. These are breakfast sliders and they are SO good!!
Hawaiian rolls, yes I know I could just stop there but there is more. Eggs, bacon, ham, cheese and spinach (a few greens will make you feel better about the cookies we are all consuming) It’s just layering all the items and then pop in the oven for 20 minutes. They get gooey and melty on the inside and have a crisp layer on the top. Amazing.

Breakfast Sliders

Ingredients:
1 pack of 12 Hawaiian sweet rolls
9 eggs, scrambled
6 slices ham
6 slices white cheddar cheese
6 strips cooked bacon
3 oz baby spinach
2 tablespoons butter, melted
1 teaspoon black pepper
Instructions:
Preheat the oven to 350 degrees. While the oven is preheating, scramble your eggs, set aside. Cook your bacon (or just use premade) and set aside.
Slice the rolls in half lengthwise. Place the bottom half in a 9 x 13-inch baking dish. Spread the eggs evenly over the rolls, then layer on the ham, cheddar, bacon, and spinach. Top with the remaining rolls.
Brush the tops of the rolls with melted butter and sprinkle the pepper on top. Bake for 20 minutes, or until the bread is golden brown. Slice into individual sliders, then serve.
