Lemon Curd

Lemon Curd. Holy smokes, lemon curd. This one came outta left field and totally surprised me at how amazing it tastes. I can't get over it. Plus, no crazy long ingredient list and no 27 step process. One saucepan, 5 ingredients. My life is changed. 

I have no idea why I even thought to attempt to make lemon curd, but it seemed like something fun to try. I found the recipe over at Taste Of Home and it did not disappoint.

Lemon curd seems fancy to me and I usually try to avoid fancy things. I would not use the word fancy to describe myself. But guess what? I'm fancy now because I made some lemon curd. And now I need to put it on toast, cookies, pastries, a spoon, all of it. Perfect amount of tart to sweet, silky consistency. I'm just SO excited about this stuff. I want to bottle it and give it away. 

If you are feeling like you want to be fancy with minimal effort, then you should probably give this recipe a try. I promise you will not be disappointed.

Ingredients

3 large eggs

1 cup sugar

1/2 cup lemon juice (about 2 lemons)

1/4 cup butter, cubed

1 tablespoon grated lemon zest

Directions

1. In a small saucepan over low to medium heat, whisk eggs, sugar and lemon juice until blended.

2. Add butter and lemon zest and continue to whisk until mixture is thickened and coats the back of a spoon. Transfer to a separate bowl, cool for 10 minutes then cover and refrigerate.

**Use real lemons rather than bottled lemon juice, the flavor is so much better**
