Goofballs

One of my coworkers topped into chat with me the other day and mentioned that her son was back from college and he requested they make Goofballs. I was like, huh? I’ve never heard of Goofballs. But then she explained the goodness that is Goofballs. Marshmallows dipped in caramel and rolled in Rice Krispies. Mind blown.

She gave me the recipe and I made them that night. So, so easy. Leah “helped” too which was fun. These gems are so good and so addicting. A little sweet, a little salty, a little creamy and a little crunchy. I’m hooked and we will be making these a lot.

Ingredients

27 caramel squares

2/3 cup sweetened condensed milk

1 stick (1/2 cup) butter

27 marshmallows

Rice Krispies

Directions

1. Melt caramels, condensed milk and butter over medium heat until melted and smooth.

2. Dip the marshmallows in the caramel, roll the covered marshmallow in the Rice Krispies and place on parchment paper to cool. I used a skewer to stick in the marshmallow to dip into the hot caramel mixture.
