Iced Oatmeal Cookies
These cookies remind me of my childhood, which is weird because I don’t really have any specific memory of them. They just make me feel childhood vibes. Although, they have me feeling very happy and I am far from my childhood. *sigh*
These are my very favorite Oatmeal Cookies (I omitted the raisins for this recipe, but you can find the original Oatmeal Raisin Cookie recipe here) Then added a simple vanilla icing on top to give it that nostalgic, sweet feeling. These cookies are pretty versatile
We love these in our house and I hope you guys do too! Add these to your classic cookie recipe stash. Follow me over @lolosdesserts on Instagram and Facebook to see the latest recipes. Iced Oatmeal Cookies
Lolo's Desserts | November 2019
Ingredients:
1/2 cup (1 stick) butter, room temperature
1/2 cup packed brown sugar
1/4 cup sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1 cup old fashioned oats
Glaze
1 and 1/2 cups sifted powdered sugar
1/4 teaspoon pure vanilla extract
2-3 Tablespoons milk
Instructions:
Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or Silpat and set aside.
In a mixer, beat the butter, regular sugar and brown sugar until fluffy, about 1 minute. Beat in the egg, vanilla extract, and salt, and mix to combine.
Remove from mixer and fold in flour, baking soda, and oats. Mix again on low until just combined.
Scoop dough into 1 inch balls, rolling between your hands to make them into circles. Place on prepared baking sheets, leaving about 2 inches between each cookie.
Bake for 11-12 minutes. Cookies will look underdone, but they will be perfect! Allow to cool on baking sheets for 10 minutes before transferring to wire racks to cool completely.
Glaze Instructions
In a medium size bowl, whisk the powdered sugar, vanilla and 1 Tablespoon of milk.
Add more milk a little at a time and mix together until you have a thick icing.
Dip the tops of the cookies in the icing. They will set after a few hours.
