Spinach Salad with Poppyseed Dressing
My mom introduced me to this salad and dressing around Christmas time. She had a party for her friends and made it for them and it was a big hit. Then she made it to go with our Christmas dinner and still a big hit. Now I’ve made it twice and it’s been a consistent big hit. When something is a bit hit and I love it, I gotta share it with you!
The salad is simple and you can really add anything you want to it, these are the things I added that made it yummy. The salad dressing is the star in my eyes though. That I wouldn’t mess with, because it’s good. Really good.

Spinach Salad with Poppyseed Dressing

Ingredients:
Salad
2 cups baby arugula
2 cups baby spinach
2 cups chopped radicchio
Mandarin oranges slices
Dried cranberries
Candied Walnuts
Fresh blueberries
1/4 cup freshly grated Parmesan
Poppyseed Dressing
3/4 cup sugar
1/2 cup apple cider vinegar
2/3 cup sunflower or canola oil
1 bunch chopped green onions
1 teaspoon kosher salt
1 teaspoon dry mustard
1 Tablespoon poppyseeds
Instructions:
Combine all the lettuces and mix ins together in a large bowl.
In a separate medium bowl combine all the ingredients and whisk together. Add more salt to taste.
Toss dressing in salad and serve! Easy!
