Roasted Brussel Sprouts with Bacon
Easy and delicious Brussel Sprouts paired with bacon to make a perfect little vegetable side for dinner. Or even a great snack on it’s own. Definitely one to try!
I am not sure I ever had Brussel sprouts growing up, which is weird because as a kid I was pretty adventurous with food and liked a lot of vegetables. Poor Brussel Sprouts were the example of a gross and sad vegetable. Here’s what all of us 80s kids didn’t realize…Brussel Sprouts are DELICIOUS! Seriously, incredible. And also, really easy to cook.
A little olive oil, a little salt and pepper and then roast them on up. Then just to make them even more special, I threw on a little bacon to add some savory and salty flavor. These are so good and you also get a delicious byproduct because sometimes the Brussel Sprout leaves fall off and get super crispy. Holy addicting.

Roasted Brussel Sprouts with Bacon

Servings: 28 bites
Ingredients:
1/2 pound Brussel Sprouts, ends cut off and then cut in half
olive oil
salt and pepper
2 strips of bacon, cut into 1 inch pieces
Instructions:
Preheat oven to 400 degrees. Line a baking sheet with Silpat or parchment paper.
Place the half pieces of the Brussel Sprouts in a bowl with a long drizzle of olive oil and a heavy pinch of salt and pepper. Toss until all the Brussel Sprouts are covered.
Place each half face down on the baking sheet. Roast for 12 minutes.
Remove from the oven and carefully flip each half over. Place the bacon pieces on top of the brussel sprout. Use a toothpick if desired to keep bacon in place.
Roast again for 15 minutes until bacon is cooked. Let cool a bit and enjoy!
