Snickerdoodle Truffles
All the great flavors of a Snickerdoodle cookie in a truffle surrounded by rich white chocolate. An easy no bake treat that is so yummy!
I feel like I need to check myself into some kid of treatment program for people who are addicted to truffles. Any and all kinds. I now find myself looking at cookies, cupcakes, cake, fudge and wondering if I could make it into a truffle. The answer is yes, yes you can.
So this time I used some Snickerdoodle cookies (store bought because life is hard and sometimes you need easy). Whipped up some truffles, chilled and covered them in white chocolate. That first bite. OMG, that first bite. These did not disappoint. All the amazing flavors of a Snickerdoodle amplified in a small bite. These are so easy and amazing, you gotta try them!

Snickerdoodle Truffles

- chill time: 30 minutes to 1 hour
- total time: 40 minutes to 70 minutes
Servings: 24
Ingredients:
2 cups Snickerdoodle cookie crumbs, about 12 cookies
4 ounces cream cheese, softened
2 cups white chocolate wafers or chips, melted
Instructions:
In a food processor, place the cookies and pulse until they are crumbs. Snickerdoodles are usually pretty soft, so you can crumble by hand as well.
In a stand mixer, pour the cookie crumbs in plus the cream cheese. Mix on low until well combined.
Prepare a baking sheet with a Silpat or parchment paper. Take about a Tablespoon size of dough and roll by hand into a ball. Place on the baking sheet. Repeat until all dough is used.
Pl;ace in fridge to chill for at least 30 minutes but longer if able to.
Once chilled, place the white chocolate in a microwave safe bowl and melt 30 seconds at a time and stir after each time until white chocoalte is smooth.
Remove the truffle balls from the fridge. Using a fork, dip each balkl into the white chocolate to coat. Tap off excess white chocolate and place back on baking sheet. Immediately sprinkle cookie crumbs over top or sprinkles.
Repeat with all the truffles. Store in the fridge until ready to devour!
