Roasted Strawberries

Strawberries remind me of my Grandma June. She always had packs of frozen strawberries in juice and she would thaw them and put them in a bowl. They were super soft and juicy. I would sit there in the kitchen and eat one by one by one. That sweet juice was the best part. I could put that in a cup and drink it.

I love fruit on top of yogurt or ice cream but there is just something about that soft and sweet strawberry on top rather than a regular strawberry. Mix some granola on top to get some crunch. OMG, such a good snack!

The best way to get that soft and sweet strawberry plus that amazing sweet juice is to roast them. Weird? Nope, delicious. Warm, squishy, juicy strawberries over top ice cream is where it’s at. SO good!

Roasted Strawberries

Lolo's Desserts | March 2020

  • cook time: 15-20 minutes
  • total time: 30 minutes

Servings: 3-4

Ingredients:

1 pound strawberries

3 Tablespoons sugar

2 teaspoons pure vanilla extract

Instructions:

  1. Preheat oven to 400 degrees. Cut stems off strawberries and cut into halves or fourths. Place into a pie dish oe small baking dish. Sprinkle sugar and vanilla and stir together to coat all the strawberries.

  2. Place in oven for 15-17 minutes. Remove, stir again and let cool slightly. Eat over anything! I recommend ice cream, yogurt, with granola. Enjoy!
