This is Instant Pot Lemon Chicken and you will be super hooked. I added some pasta with a little lemon garlic sauce but you could do this alone, with rice, cauliflower rice, veggies. The chicken turns out super moist (sorry) and full of that lemon flavor.

Instant Pot Lemon Chicken

Servings: 5-6
Ingredients:
1 teaspoon dried thyme
zest from 1 lemon
3 cloves garlic, minced (1 Tablespoon dried garlic)
large pinches of salt and pepper
2 pounds boneless, skinless chicken thighs
2 Tablespoons vegetable or canola oil
1 cup chicken broth
2 Tablespoons freshly squeezed lemon juice
Instructions:
In a small bowl, combine thyme, lemon zest, garlic, 1 teaspoon salt and 1/2 teaspoon pepper. Brush chicken with oil and then spread the mixture over the chicken thighs.
Set the Instant Pot to the saute setting. Add 1 Tablespoon of oil to bottom of Instant Pot. Add chicken and cook about 3-4 minutes on each side. Remove chicken.
Place the metal trivet in the Instant Pot, add chicken broth and lemon juice. Place chicken back into the Instant Pot in top of the metal trivet. Okay if they overlap.
Select the manual setting, set pressure to high and set time for 5 minutes. (yep, that's it). When finished, use the quick release funtion to release pressure.
Serve with noodles or rice! Enjoy!
