Roasted Cauliflower
Call me a weirdo, but I LOVE cauliflower. Not as much cauliflower rice, but good old roasted cauliflower is my favorite. When you roast it, it brings out all these natural salty and savory flavors that make my mouth so happy. Plus nothing beats the tiny little crusty pieces. The BEST!! Roasted cauliflower is incredibly easy. Oil, salt, pepper, bake. That is it. I don’t get fancy with this one.
Love just getting a head of cauliflower, usually not very expensive at all. I cut it up, do the seasoning and then roast it while making the rest of dinner. Leah has become a big fan too, almost more than broccoli. Which says a lot because the girl loves broccoli.

Roasted Cauliflower

Ingredients:
1 head of cauliflower (about 2 lbs)
1/4 cup of olive oil
large pinches of salt and pepper
Instructions:
Preheat oven to 425 degrees. Wash and cut cauliflower into florets.
Arrange florets in a single layer on a baking sheet. Pour half the olive oil over the cauliflower, then sprinkle generously with salt and pepper.
Using your hands, mix the cauliflower up to coat everything. Drizzle with remaining olive oil and sprinkle again with salt and pepper. Mix again with your hands to coat everything.
Bake for about 20 minutes. Remove then eat immediately.
