Air Fried Zucchini Sticks
Easy, healthy and delicious Air Fryer Zucchini Sticks. Easy to make and a perfect side to any meal or even just a snack. Love these!
I am slightly obsessed with our Air Fryer and I keep finding new and surprising things to make. We do the classics of chicken fingers, pizza and reheating fries (amazing) but I love when I find something new. And guess what?? These are HEALTHY!! Not only healthy, but delicious!
We had these zucchini gems as a side with our dinner and we ate them all. Not even ashamed to say that because they are healthy! They get that crunch on the outer shell from the air fryer, tons of herby flavor and then the slight sweetness and texture of the zucchini. Feels like summer in a bite.
No air fryer, no worries, I gotcha. Throw them on a baking sheet and you can bake them at high heat to get that same crunch. But if you are on the fence about an air fryer, let me help you out. Do it. Even if you only reheat fries and pizza in it, it’s worth it. Yum!

Air Fried Zucchini Sticks

Servings: 30
Ingredients:
3 medium zucchinis
1/3 cup flour
2 eggs
1 Tablespoon milk
1 teaspoon garlic
1 cup Panko or breadcrumbs
1/2 cup shredded parmesan cheese
2 Tablespoons minced parsley
1/2 teaspoon oregano
1/2 teaspoon paprika
pinch of salt and pepper
Instructions:
If using the Air Fryer, preheat to 400 degrees. Spray the air fryer basket with non-stick spray. If using an oven, preheat oven to 425 degrees and line a baking sheet with parchment paper.
Rinse zucchini and cut off each end. You can leave the peel on.
Cut zucchini in half, then cut each half in half. Then again. You can leave the zucchini sticks long or you can also cute each stick in half the horizontally way to double the number of sticks you have.
You will need 3 shallow plates or bowls to prepare. In the first one, add the flour.
The second, add the eggs, milk and the garlic. Whisk together. The third plate, combine the panko, parmesan, parsley, oregano, paprika, salt and pepper.
Take each zucchini stick and coat in the flour, then dip in the egg mixture and then finally coat in the panko mixture. Cover completely and then place each stick onto the air fryer basket or baking sheet. Continue until all zucchini sticks are coated.
For the Air Fryer, fry for 15 minutes at 400 degrees. If using the oven, bake for 30 minutes and turn halfway through baking.
Remove, set aside to cool a bit and enjoy!
