Brussels Sprout and Parmesan Pasta
Simple pasta topped with roasted Brussels sprouts, bacon, and parmesan. Quick and easy to make for a perfect weeknight meal!
If you are a Brussels Sprout lover and you are a bacon lover then you need to make this part of your meal plan this week. If you like pasta, then you have yourself a trifecta. This pasta started as a way to use up some veggies that were going to go bad. Then, of course, I had to add bacon because Brussels Sprouts and bacon need to always be together. Always.
Fry up some bacon, then use some of that super flavorful bacon grease to cook up the brussels sprouts and get that nice char on them. Olive oil, spices, pasta and then the key ingredient to bring it all together: parmesan. So good.

Brussels Sprout Pasta

Ingredients:
Spaghetti Noodles (about 10 ounces)
Bacon (8 ounces), cut into pieces
6 Tablespoons Olive Oil
2 Cups Brussels sprouts, sliced thinly
1 Tablespoon minced garlic
Juice from 1 lemon (about 5 Tablespoons)
1 teaspoon crushed red pepper flakes
salt and pepper
2 Tablespoons grated parmesan cheese
Shaved or shredded parmesan cheese for topping
Instructions:
In a large pot of salted water, cook the spaghetti until al dente.
In a large skillet on medoium heat, cook the pieces of bacon until they are just starting to get crisp. Roughly 3-4 minutes. Remove from the pan and place on a plate lined with a paper towel.
In the same pan, add the sliced brussels sprounts and minced garlic. Stir frequently until sprouts are soft and start to get a bit of char on them.
Reduce heat to medium low. Once the pasta is done, drain and then add to the skillet with the brussels sprouts. Add the lemon juice and then add the bacon back into the pasta. Stir all together.
Add the red pepper flakes, salt and pepper to taste plus 3 Tablespoons of olive oil. Stir all together to combine.
Add the grated parmesan and stir together again. Add more olive oil as needed.
Serve immediately topped with more parmesan. Enjoy!
