Lasagna Roll Ups
A fun twist to a classic dinner recipe. Love how easy these Lasagna Roll Ups are! Plus filled with a classic meat and marinara mixture and cheese! So much melty cheese!
My favorite part of lasagna is that thick melted but slightly hardened cheese layer over top of everything. I could really just eat that and I’d be perfectly happy. Added with the meaty marinara, Italian mixture and noodles, it’s just the perfect comfort dish. Plus some garlic bread, don’t forget the garlic bread.

Lasagna Roll Ups

Ingredients:
12 lasagna noodles cooked according to package
1 pound ground beef
24 ounce bottle Marinara sauce
1/2 cup diced onion
1 Tablespoon minced garlic
1 teaspoon kosher sea salt
1/2 teaspoon ground pepper
1 teaspoon dried oregano
15 ounces Ricotta cheese
1 egg
1/4 cup parmesan cheese, shredded
3 cups shredded mozarella cheese (divided)
1/4 cup chopped parsley
Instructions:
Preheat oven to 375 degrees. Cook noodles in a large pot of salted water, drain and drizzle with olive oil to keep noodles from sticking.
In a large saucepan, cook ground beef over medium high heat until cooked through and no longer pink. Add onion and cook 2-3 more minutes until softened.
Add garlic, salt and pepper. Stir and cook another minute. Add marinara sauce, bring to a simmer and then turn off heat.
Spread about 1/2 cup sauce over the bottom of a 9x13 casserole dish. Set aside.
In a large bowl, stir together ricotta, 1 egg, 1/4 cup parmesan cheese, 1 1/2 cups shredded mozarella cheese and 1/4 cup parsley.
On a sheet pan, arrange the cooked lasagna noodles out flat in a line. This will help with assembly. On each lasagna noodle, spread a scoop of the cheese mixture over the top pf each noodle. Then add a large spoonful of the meat sauce over the cheese. Roll noodles up and place in casserole dish.
Spread remaining meat sauce over the top of the lasagna rolls. Then sprinkle the remaining 1 1/2 cups mozarella cheese.
Cover with foil and cook for 40 minutes. Then remove foil and put under the broiler on low for 2-3 minutes. Watch carefully so not to burn.
Serve immediately, enjoy!
