Cheesecake Filled Strawberries- Gluten Free

So excited to do this giveaway with some amazing fellow bloggers! Also happy they let me play since I am not primarily a gluten free blogger, however, I know i have a lot of readers who are gluten free so I am so glad I can introduce you to this amazing crew plus bring you some fun and delicious new recipes to try.

Below you will find my recipe for these DELICIOUS Cheesecake Filled Strawberries. I first made these for a friend’s birthday party and their young son stood in front of the table and ate these one by one by one until they were gone. Not sure anyone else got to taste them but it made me so happy to see how much he liked them.

These are a quick and easy dessert or snack that a lot of people will be able to enjoy. Try these out and get ready to have lots of people ask you for the recipe. Or at least make them for yourself right now and you can tell everyone about how good they are during your next family Zoom call. :)

Gluten Free Cheesecake Filled Strawberries

Cheesecake Filled Strawberries- Gluten Free

Ingredients:

1 package fresh strawberries, hulled

1 block (8 ounces) full fat cream cheese

1/2 cup powdered sugar

1 teaspoon pure vanilla extract

1/4 cup crushed Gluten Free Graham Crackers

Instructions:

  1. Wash strawberries then cut green tops off. Take a spoon or knife and carefully scoop out the inner lining of the strawberry, set aside.

  2. In a stand mixer, mix the cream cheese, powdered sugar and vanilla on med-high speed until smooth. Scrape the bowl down as needed.

  3. Use a piping bag with a small tip or a good old fashioned Ziploc bag with the corner cut off. Scoop the cream cheese mixture into the bag. (I cut the tip off of the pastry bag right before I fill the strawberries)

  4. Take the gluten free graham crackers and place them in a food processor (or a Ziploc bag) and crush them into graham cracker crumbs.

  5. Fill the strawberries with the cheesecake mixture into the strawberries then sprinkle with the gluten free graham cracker crumbs. Enjoy!
